    Prepare glass

    Chill a Collins or highball glass in the freezer for 5–10 minutes, or fill it with ice while you prepare the cocktail and discard that ice before serving if you prefer a colder glass.

    Build the base

    In a cocktail shaker, add the white peach syrup, cranberry juice, fresh orange juice and fresh lemon juice. Fill the shaker halfway with ice.

    Shake

    Shake vigorously for 8–12 seconds until the outside of the shaker is frosty and the juices are well combined and chilled.

    Strain over fresh ice

    Fill the chilled Collins/highball glass with fresh cubed ice (about 1 cup). Strain the shaken mixture into the glass, leaving about 1/2–1 inch of headroom for the seltzer.

    Top with seltzer

    Gently pour 3 oz cold lemon seltzer over the back of a spoon into the glass (or pour slowly) to preserve effervescence. Stir gently once or twice with a bar spoon to integrate but keep bubbles.

    Garnish and serve

    Thread a white peach slice (or fresh cranberries or an orange twist) on a pick or float the peach on top. Serve immediately with a straw or stirrer.

    Notes: If you prefer a lighter sweetness, reduce the white peach syrup to 0.75 oz. To make homemade white peach syrup, simmer equal parts peeled chopped white peaches, sugar and water (1:1:1 by weight) for 10 minutes, mash, strain and cool.
