Prepare the pineapple
If using a whole pineapple, cut off the top and bottom with a sharp chef's knife. Stand it upright and slice away the skin in downward strips, removing the eyes as you go. Cut the pineapple into 6–8 wedges or into 1/2-inch to 3/4-inch thick rings or spears, keeping pieces uniform so they grill evenly. If desired, core each slice with a small round cutter or slice out the core from wedges.

Make the marinade
In a small bowl, whisk together the melted butter, brown sugar, lime juice, vanilla extract, ground cinnamon, and a pinch of kosher salt until the sugar is mostly dissolved and the mixture is smooth.

Coat the pineapple
Place the pineapple pieces in a shallow dish or a large resealable plastic bag. Pour about three-quarters of the marinade over the pineapple and turn or toss to coat each piece well. Reserve the remaining marinade to brush while grilling. Let pineapple sit at room temperature for 10–15 minutes (or refrigerate up to 1 hour) to allow flavors to penetrate.

Grill the pineapple
Place the pineapple directly on the hot grill grates in a single layer. Grill for 2–4 minutes per side, brushing with reserved marinade immediately before flipping and again after flipping. Look for deep golden-brown caramelization and char marks; total grilling time will be about 4–8 minutes depending on thickness. Avoid moving pieces too frequently so they can develop good color.

Serve warm
Serve the grilled pineapple warm as a side, dessert, or topping. Garnish with a sprinkle of toasted coconut flakes and fresh mint leaves. Squeeze a lime wedge over the top for bright acidity.

For a dessert, place a grilled pineapple slice on a plate and add a scoop of vanilla ice cream. Drizzle with a teaspoon of aged rum if desired and allow the rum to warm slightly from the grilled fruit before serving.
