Method
Protein & Noodles
Prepare noodles
Cook the noodles according to package instructions until just tender. Drain, toss with 1 tsp oil to prevent sticking, and set aside.
Season protein
Pat the chosen protein dry. Season with salt, pepper, cumin and smoked paprika, rubbing evenly.
Sear protein
Heat 1 tbsp vegetable oil in a large skillet or cast-iron over medium-high heat. Add protein in a single layer and cook until browned and cooked through (chicken 4–6 min per side depending on thickness; steak 2–3 min per side for medium; tofu 3–4 min per side until golden). Remove protein to a plate and keep warm; slice into bite-sized pieces if not already thinly sliced.
Vegetables & aromatics
Season vegetables with a pinch of salt and a splash (about 1 tbsp) of the sweet soy sauce while cooking to deglaze and add flavor.
Sauces & seasoning
Return the cooked protein to the skillet with the vegetables. Toss in the cooked noodles. Add the remaining sweet soy sauce, low-sodium soy sauce, rice vinegar, and lime juice. Stir gently to combine and heat through, coating noodles and protein evenly (about 1–2 minutes). Taste and adjust seasoning with more sweet soy or soy sauce if needed.
Chipotle mayo finish
Warm the chipotle mayo slightly (15–20 seconds in microwave) so it’s pourable, or thin with 1 teaspoon water if needed. Drizzle or spread chipotle mayo on warmed tortillas before filling, or serve on the side.
Cheeses & tortillas
Warm tortillas in a dry skillet or wrapped in foil in a 350°F (175°C) oven for 5–7 minutes. Place a tortilla on a plate, spoon a portion of the noodle-protein-vegetable mixture down the center. Sprinkle 2–3 tablespoons shredded cheese over the hot filling so it melts. Add a spoonful (about 2 tablespoons) of warmed cheese dip (queso) on top or on the side for dipping.
Fold or roll the tortilla tightly. Repeat for remaining tortillas and filling. If desired, quickly press rolled tortillas seam-side down in a hot skillet 30–45 seconds per side to seal and get slight crisping.
Finish & optional extras
Garnish assembled tortillas with chopped cilantro and pickled onions or quick slaw if using. Serve with lime wedges and extra chipotle mayo or hot sauce on the side.
Serve immediately while warm. Refrigerate leftovers in an airtight container for up to 3 days; reheat in a skillet or oven until warmed through.
