Season protein

Pat the chicken, steak, or shrimp dry. In a bowl toss the protein with 2 tbs olive oil, 1 tsp cumin, 1 tsp chili powder, 1 tsp garlic powder, 1 tsp salt and 1 tsp black pepper until evenly coated. Let rest 10 minutes.

Cook protein

Heat a large skillet or grill pan over medium-high heat. When hot, add the protein in a single layer. Cook chicken slices 4–6 minutes per side until internal temperature reaches 165°F (74°C). Cook steak slices 2–3 minutes per side for medium (adjust to preference). Cook shrimp 1–2 minutes per side until opaque and pink. Remove from pan and keep warm, tented with foil.

Grilled Peppers & Onions

While protein rests or cooks, toss sliced peppers and onion with 1 tbs olive oil, 1 tsp salt and 1 tsp black pepper. In the same skillet (wipe if necessary) or on a grill set to medium-high, spread vegetables in an even layer. Cook 6–8 minutes, stirring or flipping occasionally, until softened and slightly charred at the edges. Remove from heat and set aside.

Cheese Dip

Make the cheese dip while vegetables cook: In a small saucepan over low heat, combine 4 oz softened cream cheese and 1 cup milk. Stir until cream cheese melts and mixture is smooth. Gradually add 1 cup shredded cheddar and 1 cup Mexican blend, stirring until melted and smooth. Stir in 2 tbs diced green chiles, 1 tsp ground cumin, 1 tsp hot sauce and 1/2 tsp salt. If dip is too thick, add up to 2–4 tbs extra milk to reach desired pourable consistency. Keep warm over the lowest heat, stirring occasionally.

Rice

Cook rice: In a small saucepan bring 2 cups water or chicken broth to a boil with 1/2 tsp salt and 1 tsp butter. Add 1 cup rinsed rice, stir once, reduce heat to low, cover and simmer 15 minutes without lifting the lid. Remove from heat and let stand covered 5 minutes. Fluff with a fork and stir in 2 tbs chopped cilantro and 1 tsp lime juice if using.

Tortillas & Assembly

Warm tortillas: Heat a clean skillet over medium and brush lightly with 1 tbs vegetable oil or butter. Warm each flour tortilla 20–30 seconds per side until pliable and lightly browned. Keep wrapped in a clean towel to stay warm.

Assemble L-ACP: On each warmed tortilla lay a scoop (about 1/3–1/2 cup) of rice toward the center. Top with a portion of the cooked protein (about 3–4 oz), then add a generous spoonful of grilled peppers and onions. Drizzle 2–3 tbs of the warm cheese dip over the top and garnish with chopped cilantro and a lime wedge. Fold or roll burrito-style and serve immediately.

Serving suggestion: Serve extra cheese dip and lime wedges on the side. Leftover components can be refrigerated separately for up to 3 days; reheat gently to preserve texture.
