Preparation

Mashing

1. Mash the Grains

In a large mash tun, heat 5 gallons of water to 165°F (74°C). Add the Pale Malt, Caramel Malt, and Crystal Malt to the water, stirring well to ensure there are no dry clumps. Maintain the temperature at 152°F (67°C) for 60 minutes.

2. Sparging

After the mash is complete, sparge the grains with additional hot water (about 170°F or 77°C) until you collect around 6 gallons of wort in your brew kettle.

Boiling

3. Boil the Wort

Bring the collected wort to a boil. Once boiling, add the Chinook hops and boil for 60 minutes.

4. Add Flavor Hops

With 15 minutes left in the boil, add the Citra hops and Simcoe hops to impart flavor.

5. Finish with Aroma Hops

In the last 5 minutes of the boil, add the Amarillo hops for aroma.

Cooling and Fermentation

6. Cool the Wort

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

7. Pitch the Yeast

Transfer the cooled wort to a sanitized fermenter and pitch the American Ale yeast. Seal the fermenter with an airlock.

8. Fermentation

Allow the beer to ferment at a consistent temperature of around 68°F (20°C) for 1-2 weeks, until fermentation is complete.

Bottling

9. Prepare for Bottling

Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water and add it to the bottling bucket.

10. Bottle the Beer

Transfer the beer from the fermenter to the bottling bucket, mixing gently to avoid oxidation. Bottle the beer using sanitized bottles and caps.

11. Carbonation

Store the bottles at room temperature for about 1-2 weeks to allow carbonation to develop.
