Cocktail

2 oz Reposado tequila3/4 oz Fresh lime juice1/4 oz Simple syrup (optional, 1:1 sugar to water)4 oz Topo Chico (or other chilled sparkling mineral water)1 cup Ice (large cubes)1 to taste Lime wedge or wheel (for garnish)1/2 tsp Coarse salt (optional, for rimming)

Prepare glass

If you prefer a salted rim, rub a lime wedge around the outer rim of a highball or Collins glass and dip the rim into a small plate of coarse salt. Fill the glass with large ice cubes until nearly full.

Build the drink

Add 2 oz reposado tequila to the filled glass, then pour in 0.75 oz freshly squeezed lime juice. If you like a slightly sweeter Ranch Water, add 0.25 oz simple syrup now.

Top with sparkling water

Gently top the tequila and lime mixture with about 4 oz of chilled Topo Chico (or other sparkling mineral water). Pour slowly so the drink remains fizzy and to preserve carbonation.

Mix lightly and garnish

Give the cocktail one or two gentle stirs with a bar spoon to combine. Garnish with a lime wedge or wheel on the rim. Serve immediately while the mineral water is effervescent.
