Heat pan

Place a large skillet over medium-high heat and add 1 tablespoon olive oil. Let the oil warm until shimmering.

Cook aromatics

Add the finely diced onion to the hot skillet and sauté 3–4 minutes until softened and translucent. Stir in the minced garlic and cook 30 seconds until fragrant.

Brown beef

Add the ground beef, breaking it up with a spatula. Cook 6–8 minutes until no longer pink and beginning to brown in spots.

Season

Stir in tomato paste, chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Cook 1 minute to toast the spices and incorporate the tomato paste.

Simmer

Pour in 120 ml broth and scrape up any browned bits from the bottom of the pan. Reduce heat to medium-low and simmer 4–6 minutes until slightly thickened and saucy.

Finish

Remove from heat and stir in 1 tablespoon lime juice. Taste and adjust seasoning (add a pinch more salt or a squeeze of lime if needed). Keep warm while preparing other components.

Quick Pickled Onions

In a small heatproof bowl or jar, combine 60 ml apple cider vinegar, 60 ml water, 1 teaspoon sugar and 1/4 teaspoon salt. Stir to dissolve sugar and salt.

Add the thinly sliced red onion to the pickling liquid, pressing down so it is submerged. Let sit at room temperature for at least 15 minutes (longer for milder flavor). You can make these up to 24 hours ahead and refrigerate.

Simple Salsa

In a bowl, combine the diced tomato, chopped jalapeño, chopped cilantro, 1 tablespoon lime juice, 1/4 teaspoon salt and 1/8 teaspoon black pepper. Stir and taste; adjust salt or lime to preference. Keep chilled until ready to serve.

Taco Assembly & Garnishes

Warm the tortillas: heat a dry skillet over medium-high heat. Lightly brush each tortilla with a small amount of oil or spray and warm 20–30 seconds per side until pliable and spotted. Keep wrapped in a clean towel to stay warm.

Assemble tacos: spoon roughly 2–3 tablespoons of the warm beef filling onto each tortilla. Top with shredded lettuce, a spoonful of simple salsa, a few quick pickled onions, a sprinkle of shredded cheese, sliced avocado, and a dollop of sour cream or crema.

Garnish and serve: finish with fresh cilantro leaves and a squeeze of lime from the wedges. Serve immediately while tortillas and filling are warm.
