Prepare the glass

Chill a rocks or highball glass by filling with ice or placing in the freezer for 5–10 minutes. On a small plate, spread the coarse sea salt. Rub a lime wedge around the rim of the glass, then dip the rim into the salt to coat. Set the glass aside.

Shake the cocktail

Fill a cocktail shaker with the ice. Add 2 oz silver tequila, 0.75 oz fresh lime juice, 1 oz fresh pineapple juice, 0.5 oz Cointreau, 0.5 tbsp agave syrup, and 2 dashes Angostura bitters. Secure the lid and shake vigorously for 10–15 seconds until well-chilled and slightly diluted.

Strain and garnish

Discard the ice from the chilled glass. Double-strain the cocktail into the prepared glass over fresh ice. Garnish with a lime wheel and a pineapple wedge if using.

Optional Beer Float

For a beer-enhanced Pacifico: after pouring the shaken cocktail into the glass over ice, slowly top with 6 oz cold Mexican lager (Pacifico recommended). Pour gently over the back of a spoon to preserve some effervescence. Serve immediately; warn drinkers the beverage will be effervescent and slightly lighter in alcohol per volume.
