Soften and mix cheeses

Allow the 8 oz cream cheese to sit at room temperature for 20–30 minutes until soft. In a medium bowl, beat the softened cream cheese with a fork or hand mixer until smooth.

Add cheeses and seasonings

Fold in 1 cup grated sharp cheddar and 1/2 cup grated Monterey Jack until evenly distributed. Stir in 2 tablespoons finely chopped green onions, 1/2 teaspoon garlic powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper. Taste and adjust seasoning if desired. Chill the mixture for 10 minutes to firm slightly (this makes filling easier).

Prepare Jalapeños

Rinse and dry 12 jalapeños. Wear gloves if you are sensitive to capsaicin. Slice each pepper in half lengthwise and use a small spoon to remove the seeds and membranes (for less heat remove more). Pat the insides dry with paper towels.

If you prefer milder poppers, blanch the jalapeño halves in boiling water for 1 minute then drain and cool; this reduces heat slightly. Pat dry before filling.

Using a small spoon or a piping bag (with a medium tip), fill each jalapeño half with the chilled cream cheese mixture, mounding slightly but avoiding overfilling so the filling doesn't spill during breading.

Breading

Set up a breading station with three shallow bowls: 1) 1/2 cup all-purpose flour lightly seasoned with a pinch of salt, 2) eggs: beat 2 large eggs with 2 tablespoons water until homogeneous, 3) breadcrumb mixture: combine 1 cup panko, 1/2 cup fine dried breadcrumbs, 1/4 cup grated Parmesan (optional), 1/4 teaspoon cayenne (optional) and 1/2 teaspoon kosher salt; mix well.

Working one at a time, lightly dust a filled jalapeño half in the flour, shaking off excess. Dip into the beaten egg, letting excess drip back into the bowl, then press into the breadcrumb mixture to coat thoroughly. For an extra-thick crust, repeat the egg and breadcrumb step a second time. Place breaded poppers on a tray and refrigerate for 10–15 minutes to set the coating—this helps prevent the filling from leaking while cooking.

Cook (Fry or Air-Fry)

Shallow Fry

Heat about 1 cup vegetable oil in a large skillet over medium heat until it reaches 350°F (175°C) or a bubble test with a drop of breadcrumb shows steady bubbling. Fry poppers in batches, seam side up, for 2–3 minutes per side or until golden brown and crisp. Don’t overcrowd the pan. Transfer cooked poppers to a wire rack or paper towel-lined plate to drain. If any poppers are browning too quickly before filling is hot, lower the heat slightly and cover briefly to finish cooking.

Air-Fryer Option

Preheat air fryer to 400°F (200°C). Lightly brush or spray breaded poppers with oil. Arrange in a single layer (work in batches). Air-fry for 8–10 minutes, turning once halfway through, until golden and filling is hot. Exact time depends on air-fryer model—look for an internal filling temperature around 165°F (74°C).

After cooking, let poppers rest for 2 minutes before serving so the filling firms slightly and reduces burn risk.

Serving Sauce (optional) & Finish

While poppers cook, make the quick sauce: whisk together 1/2 cup sour cream, 1 teaspoon lime juice, 1 teaspoon hot sauce, and 1/8 teaspoon salt. Adjust hot sauce to taste.
