Prepare and marinate protein

If using chicken, slice thin across the grain; if using skirt steak, slice thinly against the grain. Place the sliced protein in a bowl. Add 1 tbs olive oil, 1 tbs lime juice, 1 tsp chili powder, 1 tsp ground cumin, 1 tsp smoked paprika, 1 minced garlic clove, 1/2 tsp kosher salt and 1/4 tsp black pepper. Toss until evenly coated. Let marinate at room temperature for 10–15 minutes (or refrigerate up to 1 hour).

Cook protein

Heat a large nonstick skillet or cast-iron pan over medium-high heat until hot. Add a light drizzle of oil if pan is dry. Add the marinated protein in a single layer and cook without moving for 1–2 minutes to develop browning, then stir or flip and continue cooking until cooked through — about 3–5 minutes total for thin chicken slices, 2–4 minutes for thin steak depending on thickness and preferred doneness. Remove cooked protein to a plate and keep warm.

Sauté onions and peppers

Using the same skillet over medium heat, add 1 tbs olive oil if needed. Add the sliced onion and bell peppers. Season with 1/4 tsp salt and 1/8 tsp black pepper. Sauté, stirring occasionally, until softened and edges are lightly charred, about 5–7 minutes. Taste and adjust seasoning. Return the cooked protein to the pan with the vegetables, toss to combine, then remove from heat and set aside.

Eggs & Assembly

Whisk eggs

In a medium bowl whisk together 4 large eggs, 2 tbs milk or water, 1/4 tsp salt and 1/8 tsp black pepper until just blended and slightly frothy.

Heat pan for omelet

Wipe the skillet clean or use a separate nonstick pan. Heat over medium-low and add 1 tbs unsalted butter. Swirl until melted and foamy but not browned.

Cook omelet base

Pour the egg mixture into the pan and tilt to create an even layer. As the eggs set at the edges, gently pull the edges toward the center with a spatula, allowing uncooked egg to flow underneath. Cook until eggs are mostly set but still slightly glossy on top, about 2–3 minutes.

Add filling

Evenly distribute the warmed fajita protein and vegetables over one half of the omelet. Sprinkle 1/2 cup shredded cheddar or Mexican blend cheese over the filling and add chopped cilantro and sliced green onions if using.

Fold and finish

Using the spatula, carefully fold the empty half of the omelet over the filling. Let cook another 30–60 seconds to melt cheese and finish cooking the interior. Slide the omelet onto a plate. Taste and adjust salt/pepper if needed.

To Serve (optional)

Serve the fajita omelet with warmed tortillas or toast, a dollop of sour cream or crema, salsa or pico de gallo, and lime wedges. Squeeze lime over the omelet just before eating. Leftovers: store cooled protein and vegetables separately from eggs in airtight containers in the refrigerator for up to 3 days.
