    Prepare aromatics

    Heat olive oil and butter in a large pot over medium heat until butter is melted and foaming. Add the diced onion, carrot, and celery. Sauté, stirring occasionally, until the onion is translucent and the vegetables begin to soften, about 6–8 minutes.

    Add garlic and herbs

    Stir in the minced garlic and fresh thyme leaves (or dried). Cook for 30–45 seconds until fragrant, taking care not to brown the garlic.

    Build the soup

    Add the diced potato and the seasonal vegetable or cooked protein to the pot. Pour in the stock and add the bay leaf. Increase heat to bring the liquid to a gentle boil.

    Simmer

    Once boiling, reduce heat to a simmer. Cook uncovered until the potato is tender and the seasonal vegetable is cooked through, about 12–15 minutes. If using raw meat or denser vegetables, extend simmer time until fully cooked and tender.

    Season

    Remove and discard the bay leaf. Stir in salt and freshly ground black pepper. Taste and adjust seasoning as needed.

Finishing & garnish

    Optional cream finish

    If you prefer a creamier soup, stir in heavy cream or milk now and warm for 2–3 minutes without boiling. For a smoother texture, you can partially puree with an immersion blender (blend about one-third to half of the soup) or transfer a portion to a blender, then return to the pot and combine.

    Brighten and finish

    Stir in lemon juice if using, then taste and correct seasoning. Add chopped parsley and chives. Drizzle a small amount of extra-virgin olive oil over individual bowls for extra flavor, if desired.

    Serve

    Ladle the soup into bowls, garnish with additional herbs, and serve with crusty bread or croutons on the side.
