Bring steak to room temperature
Remove the 12 oz top sirloin from the refrigerator about 30–45 minutes before cooking so it comes close to room temperature. Pat it dry with paper towels to remove excess moisture.

Prepare marinade
In a small bowl, whisk together 2 tbs olive oil, 1 tbs soy sauce, 1 tsp Worcestershire sauce, 2 minced garlic cloves, 1 tsp kosher salt, 1 tsp freshly ground black pepper, 1 tsp smoked paprika, and 1 tbs fresh thyme leaves (if using).

Marinate
Place the steak in a shallow dish or zip-top bag and pour the marinade over it, turning to coat both sides. Let sit at room temperature for 20–30 minutes. If you prefer a deeper flavor, refrigerate up to 2 hours, then bring back to room temperature before cooking.

Season before cooking
Just before cooking, blot excess marinade from the steak and lightly re-season both sides with a pinch more kosher salt and a crack of black pepper if desired. This ensures a good crust without excess moisture steaming the surface.

Sear the steak
Place the steak on the hot grill or skillet. Sear without moving for 3–4 minutes to develop a deep brown crust. Flip and sear the other side for 3–4 minutes for medium-rare (internal temperature about 130–135°F / 54–57°C). For medium, cook 4–5 minutes per side (140–145°F / 60–63°C). Adjust time for thickness and desired doneness.

Baste and finish
In the last 1–2 minutes of cooking, reduce heat slightly. Add 1 tbs unsalted butter, 1 smashed garlic clove, and a sprig of thyme or 1 tbs chopped parsley to the skillet (or use a heatproof pan on the grill). Tilt the pan and spoon the melted butter and juices over the steak repeatedly (basting) to add flavor and gloss.

Rest the steak
Remove the steak to a cutting board and tent loosely with foil. Let rest 5–7 minutes to allow juices to redistribute. Resting will also carry the internal temperature up a few degrees.
