Soak/Prepare Liver (optional)

    Trim & Soak

    Trim thin membranes and large veins from the liver and slice into 1/4"–1/2" thick pieces. Place slices in a bowl and cover with milk or buttermilk mixed with the lemon juice or vinegar. Refrigerate for 30–60 minutes to mellow flavor. After soaking, pat liver dry thoroughly with paper towels.

Coating & Seasoning

    In a shallow dish combine flour, salt, pepper, and paprika (if using). Lightly dredge each patted-dry liver slice in the seasoned flour, shaking off excess. Set dredged slices on a plate while preparing pan and aromatics.

Cook Bacon (optional)

    If using bacon, heat a large skillet over medium heat. Add bacon pieces and cook until crisp (about 6–8 minutes). Remove bacon with a slotted spoon to a paper towel-lined plate, leaving rendered fat in the pan. Reduce heat to medium-low.

Sauté Onions & Mushrooms

    In the same skillet (add butter and oil if you didn't use bacon fat) heat over medium. Add sliced onions and a pinch of salt; cook, stirring occasionally, until soft and beginning to caramelize, about 10–12 minutes. Add sliced mushrooms and continue to cook 5–6 minutes until mushrooms release moisture and brown. Add minced garlic and cook 30–45 seconds until fragrant. Transfer onion–mushroom mixture to a plate and keep warm.

Sear Liver

    Increase heat to medium-high and add remaining 1 tbs butter and 1 tbs oil if needed to the skillet. Add dredged liver slices in a single layer without crowding (work in batches if necessary). Sear 1.5–2 minutes per side for medium-rare to medium (internal temp ~145°F/63°C), or 3 minutes per side for more done, avoiding overcooking which makes liver tough. Do not move slices while searing so a brown crust forms. Remove cooked liver to a warm plate.

Deglaze & Finish Sauce

    Reduce heat to medium. Pour wine or 1/4 cup beef stock into the hot pan to deglaze, scraping up browned bits with a wooden spoon. If using wine, let it reduce 1–2 minutes. Add Worcestershire sauce and remaining beef stock if needed. Stir in lemon juice. Return onion–mushroom mixture and cooked bacon (if using) to the pan and warm through for 1 minute. Taste and adjust seasoning with salt and pepper.

Serve

    Return liver to the pan briefly (30 seconds) to rewarm without further cooking, spoon sauce, onions, mushrooms, and bacon over slices. Sprinkle with chopped parsley and serve immediately.
