Season the chicken
Pat the chicken breasts dry with paper towels. Rub the chicken with olive oil. In a small bowl, mix smoked paprika, ground cumin, garlic powder, onion powder, salt, and black pepper. Sprinkle and rub the spice mixture evenly over both sides of the chicken.
Cook the chicken (stovetop & simmer)
Place a medium skillet or sauté pan over medium-high heat. When hot, add the seasoned chicken and sear 2 minutes per side until lightly browned. Add 1 cup chicken broth (or water) and bring to a simmer. Reduce heat to low, cover, and poach gently for 12–15 minutes or until an instant-read thermometer reads 165°F (74°C). If using thinner breasts, check early to avoid drying.
Shred and finish
Remove chicken to a cutting board and let rest 3 minutes. Shred using two forks or a stand mixer with paddle on low for 30 seconds. Return shredded chicken to the warm pan with any remaining juices. Stir in lime juice and optional minced chipotle if using. Taste and adjust salt. Keep warm while assembling nachos.

Preheat oven and prepare sheet
Preheat the oven to 425°F (220°C). Line a large rimmed baking sheet with foil for easy cleanup. Spread half of the tortilla chips in an even layer on the sheet, leaving small gaps so cheese can melt between chips.
Layer first round
Sprinkle about half of the shredded cheddar and half of the Monterey Jack evenly over the chips. Dot half of the shredded pulled chicken across the cheese layer. Scatter half of the black beans, half the corn, and a few sliced pickled jalapeños where you like heat.
Layer second round
Add the remaining chips on top (pile loosely), then repeat with the remaining cheeses, pulled chicken, black beans, corn, and pickled jalapeños so you end up with a two-layered nacho stack.
Bake
Place the baking sheet in the preheated oven and bake 6–10 minutes until the cheese is fully melted and bubbling. Watch closely to prevent burning; ovens vary. If you prefer a crispier top, switch to broil for 30–60 seconds, watching constantly.
Finish and garnish
Remove nachos from oven. Immediately sprinkle sliced green onions, chopped cilantro, and crumbled queso fresco/cotija (if using). Add dollops of sour cream or crema, spoonfuls of salsa/pico de gallo, and avocado or guacamole across the top. Offer lime wedges and hot sauce at the table.
Serving
Serve the nachos hot from the baking sheet or transfer to a large platter. Encourage diners to scoop from multiple spots to get chips, melted cheese, beans, and pulled chicken in each bite. Leftovers can be reheated in a 350°F (175°C) oven for 8–10 minutes; add fresh garnishes after reheating.
