Cook fruit
Combine 2 cups blueberries, 3 tbs sugar and 60 ml water in a small saucepan over medium heat.
Bring to a gentle simmer, stirring occasionally so sugar dissolves and berries begin to burst, about 6–8 minutes.
Use the back of a spoon or a potato masher to lightly crush berries to release more juice and body for the syrup.
Stir in 1 tbs lemon juice, 1 tsp vanilla extract and 1 tsp ground cinnamon. Continue simmering 1–2 minutes to meld flavors.
Strain (optional)
If you want a smoother syrup, pass the mixture through a fine-mesh sieve into a heatproof bowl, pressing solids to extract as much liquid as possible. For a chunkier, cobbler-like mouthfeel, reserve the berry pieces and some syrup.
Allow syrup to cool to room temperature. It will thicken slightly as it cools. Makes about 3/4 to 1 cup syrup.

Prepare vanilla cream
If using vanilla ice cream: scoop 1 cup softened vanilla ice cream into a bowl and stir with 2 tbs half-and-half (if needed) to reach pourable, creamy consistency. If using heavy cream: whip just to soft peaks and gently fold in 1 tsp vanilla extract to mimic rich, ice cream-like texture.
Fill two 16-20 oz glasses with ice cubes (about 1 cup each).
Divide 3–4 tbs of the cooled blueberry syrup between the two glasses, pouring it over the ice so it settles near the bottom. Reserve extra syrup for topping or additional sweetness.
Add about 2–3 generous spoonfuls (or 1/4 cup) of the vanilla cream mixture to each glass. The cream will create the 'dirty' cloudy layer in the soda.
Gently stir once or twice with a long spoon to distribute the syrup and cream slightly while retaining a marbled, cobbler-like appearance.
Garnish each glass with a sprinkle of toasted graham cracker crumbs, 4 fresh blueberries, and a small lemon wedge on the rim if desired.
Taste and add additional blueberry syrup or a splash of lemon juice to adjust sweetness and brightness.
Serve immediately with a straw and long spoon for scooping any berry bits or cream.
