    Prepare the Ingredients

    Chop the carrots, potatoes, celery, onion, and garlic into small, bite-sized pieces.

    Sear the Chicken

    In a large pot, heat the olive oil over medium-high heat. Season the chicken thighs with salt and black pepper, then add them to the pot. Sear for about 5-7 minutes on each side until golden brown. Remove the chicken and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion and garlic. Sauté for 2-3 minutes until soft and fragrant. Then add the carrots, potatoes, and celery. Cook for another 5 minutes, stirring occasionally.

    Add Spices

    Sprinkle in the paprika, cumin, and stir well to combine with the vegetables. Cook for 1-2 minutes.

    Build the Stew

    Return the seared chicken to the pot. Add the chicken broth, tomato paste, and bay leaves. Bring to a boil, then reduce heat to low and cover the pot.

    Simmer

    Let the stew simmer for about 30-35 minutes, or until the chicken is cooked through and tender, and the vegetables are soft.

Serving

    Prepare Rice

    While the stew is simmering, cook the rice according to package instructions.

    Once the stew is ready, serve it hot over a bed of rice. Garnish with fresh parsley for added flavor and presentation.
