Preparing the Corn Polenta

    Cook the Polenta

    In a large saucepan, bring 4 cups of water to a boil. Stir in 1 tsp of salt. Gradually whisk in the yellow cornmeal, making sure there are no lumps. Reduce the heat to low and cook, stirring frequently, until the polenta thickens (about 15-20 minutes).

    Add Creaminess

    Once thickened, stir in the milk and Parmesan cheese. Mix until well combined and creamy. Season with black pepper to taste. Keep warm on low heat while you prepare the scallops.

Cooking the Scallops

    Prepare the Scallops

    Pat the scallops dry with a paper towel and season both sides with Cajun seasoning.

    Sear the Scallops

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. When the oil is hot, add the scallops to the skillet, ensuring not to overcrowd the pan. Sear for about 2-3 minutes on one side until a golden-brown crust forms.

    Finish Cooking

    Flip the scallops and add 1 tablespoon of butter to the skillet. Cook for an additional 2-3 minutes, basting the scallops with the melted butter until they are opaque and cooked through.

Plating the Dish

    Serve the Dish

    Spoon a generous portion of the creamy corn polenta onto each plate. Arrange 3 blackened scallops on top of the polenta. Garnish with fresh parsley and serve with lemon wedges on the side.
