Pasta Preparation

    Cook the Penne

    In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Vodka Sauce Preparation

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion, red bell pepper, and carrot. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Garlic

    Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.

    Make the Sauce

    Pour in the vodka and let it simmer for about 2-3 minutes until slightly reduced. Add the crushed tomatoes, salt, and black pepper, stirring well.

    Add Cream

    Reduce the heat to low and stir in the heavy cream. Allow the sauce to simmer for another 5 minutes, stirring occasionally.

    Incorporate Fresh Herbs

    Stir in the chopped fresh basil and half of the grated parmesan cheese into the sauce, mixing until well combined.

Pancetta Preparation

    Fry the Pancetta

    In a separate pan, cook the diced pancetta over medium heat until crispy, about 5-7 minutes. Drain on paper towels.

Combine and Serve

    Combine Pasta and Sauce

    Add the cooked penne pasta to the vodka sauce, tossing to coat the pasta evenly.

    Serve

    Serve the pasta in bowls, topped with the crispy pancetta and the remaining grated parmesan cheese. Garnish with additional fresh basil if desired.
