Lamb Marinade Preparation

    Prepare the marinade

    In a bowl, mix together olive oil, chopped fresh rosemary, minced garlic, lemon juice, salt, and black pepper to create the marinade.

    Marinate the lamb

    Place the lamb rack in a resealable plastic bag or a shallow dish. Pour the marinade over the lamb, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results.

Cooking the Lamb

    Preheat the oven

    Preheat your oven to 400°F (200°C).

    Sear the lamb

    In a hot skillet over medium-high heat, sear the marinated lamb rack for about 3-4 minutes on each side until browned.

    Roast the lamb

    Transfer the seared lamb to a baking dish and roast in the preheated oven for 15-20 minutes for medium-rare, or until the internal temperature reaches 135°F (57°C).

    Rest the lamb

    Remove the lamb from the oven and let it rest for 5-10 minutes before slicing into lollipops.

Mashed Red Potatoes Preparation

    Cook the potatoes

    In a large pot, cover the red potatoes with water and bring to a boil. Cook for about 15-20 minutes or until the potatoes are tender when pierced with a fork.

    Mash the potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Assembly

    Plate the dish

    Spoon a generous amount of mashed red potatoes onto each plate. Arrange the lamb lollipops beside the potatoes and serve immediately.
