    Prepare the Steak

    Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

    Season the Steak

    Rub the steak with olive oil, then sprinkle both sides with salt and black pepper.

    Sear the Steak

    In a skillet over medium-high heat, add the butter. Once melted, add the steak and sear for about 4 minutes on each side for medium-rare.

    Add Flavor

    Add the sprig of rosemary to the skillet and baste the steak with the melted butter for an additional minute.

    Rest the Steak

    Remove the steak from the skillet and allow it to rest for at least 5 minutes before serving.

Garlic Mashed Potatoes

    Boil the Potatoes

    Peel and chop the russet potatoes into quarters. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Prepare the Garlic

    During the last 5 minutes of boiling, add the garlic cloves to the pot.

    Mash the Potatoes

    Drain the potatoes and garlic, then return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Asparagus

    Prepare the Asparagus

    Trim the tough ends off the asparagus and rinse under cold water.

    Season the Asparagus

    Toss the asparagus with olive oil, salt, and black pepper.

    Roast the Asparagus

    Spread the asparagus on a baking sheet and roast in a preheated oven at 400°F (200°C) for 12-15 minutes until tender.
