Juicing the Lemons
Roll the lemons on a flat surface to loosen the juices. Cut them in half and juice them using a citrus juicer, strainer, or by hand. Collect the juice in a measuring cup, aiming for about 1 cup of lemon juice.

Preparing the Ginger
Peel the ginger root using a spoon or a vegetable peeler. Grate or finely chop the ginger to release its juices.

Mashing the Mint
In a bowl, add the fresh mint leaves and lightly mash them with a muddler or the back of a spoon to release their flavor.
Mixing

Combine Ingredients
In a large pitcher, combine the freshly squeezed lemon juice, mashed mint leaves, grated ginger, honey or sugar. Stir well until the sweetener is dissolved.

Add Water
Pour in the cold water into the pitcher and stir thoroughly to mix all the ingredients evenly.
Serving

Chill and Serve
Taste the mixture; adjust sweetness if necessary. Chill in the refrigerator for at least 30 minutes. Serve over ice and garnish with additional mint leaves if desired.
