Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) and prepare your ramekins by greasing them with butter and dusting with flour.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, egg yolk, and vanilla extract until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture and stir gently until just combined.

  5. 5

    Add Flour and Salt

Sift the all-purpose flour and salt into the chocolate mixture. Gently fold until no dry ingredients remain.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

Baking

  1. 7

    Bake the Cakes

Place the filled ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.

  2. 8

    Cool Slightly

Allow the cakes to cool for 1 minute before inverting them onto plates.

Serving

  1. 9

    Serve the Lava Cakes

Dust the molten chocolate lava cakes with powdered sugar and serve immediately with a scoop of vanilla ice cream and fresh berries on the side.
