Crust Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix the Crust Ingredients
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until the crumbs are evenly coated.

Form the Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan, ensuring it's even and compact.

Bake the Crust
Bake in the preheated oven for 8-10 minutes, until golden. Remove from oven and let it cool while you prepare the filling.
Filling Preparation

Beat the Cream Cheese
In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy.

Add Sugar and Sour Cream
Add the granulated sugar and sour cream to the cream cheese, and mix until well combined.

Incorporate Vanilla and Eggs
Add the vanilla extract and eggs, one at a time, mixing well after each addition until fully incorporated.

Pour Filling into Crust
Pour the cheesecake filling over the cooled graham cracker crust, smoothing the top with a spatula.

Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.

Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour. Then, refrigerate for at least 4 hours or overnight before serving.
