Fruit Puree
Cocktail Mixture
Method
Preparing the Peach Puree
- 1
Peel and Slice Peaches
Begin by washing the ripe peaches thoroughly. Peel the skins off using a knife or vegetable peeler. Cut the peaches in half, remove the pit, and slice them into smaller pieces to make blending easier.
- 2
Blend Peaches
Place the sliced peaches into a blender or food processor. Blend on high speed until the mixture becomes smooth and creamy. If desired, add a little water to help with blending.
- 3
Strain Puree (Optional)
For a smoother texture, strain the peach puree through a fine-mesh sieve to remove any pulp. This step is optional based on your texture preference.
Mixing the Bellini
- 4
Combine Ingredients
In a large pitcher, combine the peach puree with fresh lemon juice and simple syrup. Stir gently to mix the ingredients together evenly.
- 5
Add Prosecco
Slowly pour in the chilled bottle of Prosecco into the pitcher. Be careful to pour slowly to prevent excessive bubbling. Stir gently to combine all the ingredients without losing the carbonation.
- 6
Serve
Pour the Bellini mixture into champagne flutes or cocktail glasses. Garnish with a slice of peach or a sprig of mint if desired. Serve immediately and enjoy!
