Prepare the Tartar Sauce
In a bowl, mix together mayonnaise, chopped dill pickles, and lemon juice. Stir until well combined and set aside.
Make the Coleslaw
In a large bowl, combine shredded cabbage and carrots. In a separate small bowl, whisk together sugar, vinegar, and salt. Drizzle over the cabbage mixture and toss to coat. Set aside.
Prepare the Batter
In a large mixing bowl, whisk together flour, cornstarch, baking powder, salt, and pepper. Gradually add the beer while whisking until smooth and well combined.
Fry the Fish
Heat vegetable oil in a deep pan or fryer to 350°F (175°C). Dip each fish fillet into the batter, allowing excess to drip off, then carefully place in the hot oil. Fry for about 4-5 minutes, or until golden brown and cooked through. Remove and drain on paper towels.
Cook the Fries
While the fish is frying, cook the frozen fries according to package instructions until crispy.
Serve
On a plate, serve the fried fish alongside the crispy fries, coleslaw, and a generous dollop of tartar sauce.
