Prepare the Egg Mixture
In a large bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
Slice the Croissants
Carefully slice each croissant in half horizontally to create a top and bottom.
Soak the Croissants
Dip each croissant half into the egg mixture, ensuring both sides are coated. Allow excess to drip off.
Grill the Croissants
In a large skillet, melt 1 tablespoon of butter over medium heat. Place the soaked croissant halves in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy. Repeat with the remaining croissants, adding more butter as needed.
Serve
Stack the grilled croissant French toast on plates, dust with powdered sugar, and drizzle with maple syrup to taste. Serve immediately.
