Method
Make Pineapple-Infused Tequila (optional, can be prepared ahead)
Quick infusion (2–4 hours)
Chop 4–6 ounces fresh pineapple into small pieces and place in a clean jar. Add 4 ounces of tequila, seal, and let sit at room temperature for 2–4 hours, gently shaking the jar every 30–45 minutes. Strain out solids through a fine mesh or cheesecloth and discard solids. Use the infused tequila in the cocktail recipe below.
Overnight infusion (24–48 hours)
For a stronger pineapple flavor, combine 8–10 ounces chopped pineapple with 4 ounces tequila in a jar, seal, and refrigerate for 24–48 hours. Strain before using. Note: longer infusion increases pineapple intensity and can add some sweetness.
Prepare Strawberry Puree (if not using store-bought)
Hull and roughly chop 3–4 medium fresh strawberries. Place in a blender or food processor with a teaspoon of sugar or a splash of simple syrup if strawberries are not very sweet. Blend until smooth. Optionally strain through a fine mesh to remove seeds for a silky texture. Measure out 1 oz for the recipe.
Mix Cocktail
Fill a cocktail shaker with ice (about 4–6 large cubes).
Add 2 oz pineapple-infused tequila (or plain tequila if not infused), 2 oz pineapple juice, 1 oz strawberry puree, 0.5 oz triple sec, and 0.75 oz fresh lime juice to the shaker. If you prefer a sweeter cocktail, add 0.25 oz simple syrup.
Shake vigorously for 12–15 seconds until the shaker feels cold and well chilled. This chills and slightly dilutes the drink for balance.
Prepare a rocks or coupe glass by filling with fresh ice (cubed or crushed, per preference). Strain the cocktail into the glass using a Hawthorne strainer or fine mesh to catch any pulp.
Garnish with a pineapple wedge and a sliced strawberry on the rim or float a thin strawberry slice on top.
Serve immediately with a straw or stirrer.
Notes & Variations
To make a frozen version, combine the same ingredients in a blender with 1 to 1.5 cups of ice and blend until smooth. Adjust sweetness to taste.
For a lighter cocktail, reduce tequila to 1.5 oz and increase pineapple juice to 2.5 oz.
If you don't want to infuse tequila, replace infused tequila with equal parts plain tequila + an extra 0.5 oz pineapple juice for brightness.
