Prepare vegetables

Peel and finely slice the yellow onion into thin half-moons. Core and seed the red bell pepper, then dice into small pieces (about 1/4-inch). If using jalapeño or poblano, remove seeds and membranes and finely dice. Rinse canned corn or thaw frozen corn and pat dry.

Cook vegetables

Heat a large nonstick skillet over medium heat. Add 1 tablespoon neutral oil. When shimmering, add the sliced onion and diced red pepper. Sauté for 4–5 minutes until softened and beginning to brown. Add the jalapeño (if using) and corn. Season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon ground cumin. Cook another 2–3 minutes until corn is warmed and vegetables are fragrant. Transfer the vegetable mixture to a bowl and set aside.

Assemble quesadillas

Wipe the skillet clean and return to medium-low heat. Lightly butter one side of a tortilla (about 1/2 tablespoon per tortilla) or brush with a little oil. Place the tortilla butter-side-down in the skillet. Sprinkle a layer of cheeses evenly over the tortilla (about 3/4 cup combined cheese per quesadilla). Spoon roughly 1/4 of the cooked vegetable mixture over the cheese, keeping a small border around the edge. Add another light sprinkle of cheese on top to help the top tortilla stick (about 2 tablespoons). Top with a second tortilla, buttered side up.

Cook until golden and melty

Cook the assembled quesadilla for 2–3 minutes on the first side, pressing gently with a spatula to encourage even contact. When the bottom is golden brown and the cheese begins to melt, carefully flip the quesadilla using a wide spatula. Cook the second side another 2–3 minutes until golden and the cheese is fully melted. Reduce heat slightly if the tortillas brown too quickly before cheese melts. Transfer the cooked quesadilla to a cutting board and let rest 1 minute, then cut into 4 wedges. Repeat assembly and cooking for remaining tortillas and filling.

Divide the quesadilla wedges among plates. Serve with 2 tablespoons sour cream per serving and approximately 3 tablespoons pico de gallo alongside each portion. Sprinkle chopped cilantro over the quesadillas and pico if desired. Offer lime wedges to squeeze over the top for brightness.

Optional: If you prefer a saucier pico, stir a squeeze of lime and a pinch of salt into the pico de gallo before serving. For crispier quesadillas, finish briefly in a preheated 400°F (200°C) oven on a baking sheet for 3–4 minutes after pan-frying.
