Method
Prepare Glass
Rim the glass (optional)
If you like a spiced rim, rub a lime wedge around the rim of a rocks or coupe glass and dip into coarse salt or tajín. Set glass aside.
Muddle & Build
Muddle jalapeño
Place 3 jalapeño slices in a cocktail shaker. Gently muddle 6–8 times to release aroma and a moderate amount of heat — avoid over-muddling to keep bitterness down. If you want less heat, remove seeds before muddling.
Add liquids
Add 2 oz reposado tequila, 1 oz pineapple liqueur, 2 oz fresh pineapple juice, 0.75 oz fresh lime juice, and 0.5 oz simple syrup (optional) into the shaker with the muddled jalapeño.
Dry shake (optional)
If you want more integrated jalapeño flavor and a slightly frothy texture, dry shake (shake without ice) vigorously for 10–12 seconds.
Shake with ice
Add ice to the shaker and shake vigorously for 12–15 seconds until well chilled (shaker becomes frosty).
Strain & Serve
Double strain
Double strain the cocktail into the prepared glass filled with fresh ice using a Hawthorne strainer and a fine mesh strainer to catch jalapeño bits and pulp for a smooth drink.
Garnish
Garnish with a pineapple wedge/spear and a single jalapeño slice on top or on the rim. Serve immediately.
