For Jalapeño-Infused Tequila

Prepare infusion

Wash the jalapeño, dry it, slice off the stem and cut into 4–6 slices. For milder heat remove seeds; leave seeds for more heat.

Pour 12 oz blanco tequila into a clean glass jar with a tight lid. Add the jalapeño slices, seal, and shake gently to combine.

Let the tequila infuse at room temperature for 2–6 hours, tasting every hour after the first 2 hours. For a bright, mild jalapeño note 2–4 hours is typical; 4–6 hours yields more heat. Once desired heat is reached, remove jalapeño slices and transfer infused tequila to a bottle. Chill before using.

Cocktail Assembly

If rimming the glass: rub a lime wedge around the glass rim, then dip rim into coarse salt or Tajín. Set glass aside.

Fill a cocktail shaker with ice (about 1 cup).

Add 2 oz jalapeño-infused tequila, 1 oz passion fruit purée (or pulp), 0.5 oz triple sec, 0.75 oz fresh lime juice, and 0.5 oz simple syrup to the shaker.

Shake vigorously for 12–15 seconds until the shaker exterior feels cold and slightly frosty; this chills and dilutes to proper balance.

Double-strain (if using passion fruit seeds) into the prepared glass over fresh ice. If you prefer a shorter drink, serve straight up in a chilled coupe without ice.

Garnish with 1 thin jalapeño slice floated on top and half a passion fruit or a few passion fruit seeds and a lime wheel. Serve immediately.
