Prepare glass

Choose a large 56 oz pitcher or a large party margarita glass (or divide into individual glasses). Rub a lime wedge around the rim of the serving vessel(s). If salting the rim, spread the coarse salt on a small plate and dip the moistened rim into the salt to coat. Set glass(es) aside.

Juice citrus

Juice fresh limes until you have 3 oz (about 4–6 limes). Juice fresh oranges to yield 4 oz. Strain the juices through a fine mesh strainer into a measuring cup to remove pulp and seeds for a smooth cocktail.

Combine ingredients

In a large cocktail shaker or a pitcher big enough to allow vigorous stirring, add 8 oz blanco tequila, 2 oz triple sec, 3 oz fresh lime juice, 4 oz fresh orange juice, and 1 oz agave nectar. If you prefer slightly sweeter margaritas, add the optional 0.5 oz simple syrup.

Chill and dilute

Add 3 cups of ice to the shaker or to the pitcher. If using a shaker, cap and shake vigorously for 15–20 seconds until the outside of the shaker is frosty (this chills and dilutes the cocktail correctly). If using a pitcher, stir vigorously with a long spoon for 20–30 seconds to chill and dilute.

Taste and adjust

Taste a small sample. If the cocktail is too tart, add up to 0.5 oz more agave nectar or the optional simple syrup in 0.25 oz increments. If too sweet, add a splash (0.25–0.5 oz) more lime juice. Mix briefly after each adjustment and re-taste.

Serve

Fill the prepared 56 oz serving vessel or individual glasses with fresh ice. Strain the margarita mixture into the vessel(s). Garnish with orange slices and lime wedges on the rim or floated in the drink.

Storage note

If not serving immediately, keep the mixture chilled in the refrigerator up to 24 hours (add fresh ice and stir before serving). Fresh citrus flavor is best when consumed the same day.
