Preheat and prepare

Preheat oven to 425°F (220°C). Line a rimmed baking sheet with foil and set a wire rack on the sheet. This allows hot air circulation and keeps wings crisp.

Dry and season wings

Pat the wings very dry with paper towels to remove surface moisture. Place wings in a large bowl and toss with baking powder, kosher salt, black pepper, and 1 tablespoon vegetable oil until evenly coated. The baking powder helps crisp the skin.

Arrange and roast

Arrange wings skin-side up on the wire rack in a single layer, leaving small gaps between pieces. Roast in the preheated oven for 35–45 minutes, flipping once about halfway through (at 18–22 minutes). Roast until skin is deep golden-brown and crisp and an instant-read thermometer inserted into the thickest part reads 165°F (74°C). If needed, broil 1–2 minutes at the end to deepen color—watch closely to avoid burning.

Combine and simmer

While wings roast (start when wings have about 15 minutes left), place a small saucepan over medium-low heat. Add the honey, minced chipotle peppers, adobo sauce, apple cider vinegar, soy sauce, lime juice, minced garlic, smoked paprika, salt, and black pepper. Stir to combine.

Reduce and finish

Warm the mixture gently until it starts to steam and small bubbles appear around the edge (do not boil vigorously; vigorous boiling can make honey grainy). Simmer gently 3–5 minutes, stirring occasionally, until slightly thickened. Reduce heat to low, then stir in the butter until melted and the sauce is glossy. Taste and adjust seasoning—add an extra 1/2 teaspoon adobo or a pinch of salt if you want more heat or depth.

Optional smoothing

If you prefer a very smooth sauce, transfer to a blender or use an immersion blender and blend briefly until uniform. Let cool slightly before tossing with wings.

To Finish / Garnish

When wings are fully cooked and crisp, transfer them to a large clean bowl. Pour about two-thirds of the warm honey-chipotle sauce over the wings and toss gently to coat each piece evenly. Reserve remaining sauce for glazing or serving on the side.

Arrange coated wings on a serving platter. Sprinkle toasted sesame seeds and sliced scallions over the top. Serve immediately with lime wedges and remaining warm sauce on the side for extra saucing.

Storage: Refrigerate leftover wings and sauce in separate airtight containers up to 3 days. Reheat wings in a 375°F (190°C) oven 8–10 minutes until warmed and crisp. Rewarm sauce gently on low heat, stirring to reincorporate.
