    Wash all fresh fruit thoroughly. Hull and quarter the strawberries; keep blueberries whole; peel and slice the kiwi; pit and slice the peach or nectarine if using; segment the orange or peel and separate mandarin slices.

    Place all prepared fruit in a medium mixing bowl. Add 1 tablespoon fresh lemon juice and 1 teaspoon honey or maple syrup. Gently toss to combine so the fruit is lightly glazed and won't brown. Taste and adjust sweetness with an additional 1/2 teaspoon honey if desired.

Yogurt

    In a small bowl stir together 2 cups Greek yogurt and 1/2 teaspoon vanilla extract until smooth. If you prefer sweeter yogurt, stir in 1 teaspoon honey to taste.

Assemble & Serve

    Individual Bowls

    Divide the vanilla Greek yogurt evenly between 4 serving bowls (about 1/2 cup yogurt per bowl).

    Top each bowl with the mixed seasonal fruit, dividing the fruit evenly (about 1/2 to 3/4 cup fruit per bowl).

    Sprinkle about 1/4 cup granola over each bowl (divide the 1 cup granola across 4 bowls).

    Finish with a scattering of toasted chopped nuts (about 1/2 tablespoon per bowl), a pinch of chia or flaxseed if using, and garnish with a mint leaf.

    Serve immediately so the granola stays crunchy. If preparing ahead, keep granola separate and assemble just before serving.
