Garnish & Rim
Method
Prepare Rim
- 1
Mix rim
On a small plate combine li hing mui powder and fine sea salt. Adjust ratio to taste; standard is about 2:1 li hing mui to salt.
- 2
Moisten the rim of a rocks glass with the lime wedge by running it around the glass lip. Dip the moistened rim into the li hing mui/salt mixture, twisting to coat evenly. Set glass aside with a few fresh ice cubes.
Mix Cocktail
- 3
Fill a cocktail shaker with a generous handful of ice (about 3/4 cup).
- 4
Add Mi Campo Blanco Tequila (2 oz), passion fruit (lilikoi) puree (1 oz), fresh lime juice (1 oz), orange liqueur (1/2 oz), and simple syrup (1/2 oz) to the shaker.
- 5
Secure the shaker lid and shake vigorously for 12–15 seconds, until the shaker is cold and well-chilled.
- 6
Fill the prepared rocks glass with fresh ice (on the rocks). Strain the shaken cocktail into the glass over the ice.
Garnish & Serve
- 7
Float or place the lime wedge on the rim and optionally set half a passion fruit or a thin passion fruit wheel on top of the ice or rim for visual appeal.
- 8
Serve immediately with a short cocktail stirrer or straw. Offer an extra lime wedge on the side if desired.
