Prepare ogbono
If you have whole ogbono seeds, toast lightly in a dry skillet over medium heat for 2–3 minutes until fragrant, then grind to a fine powder. Measure 3/4 cup ground ogbono.
Heat a medium pot over medium heat. Add 1/4 cup palm oil and warm until it becomes runny and slightly shimmering but not smoking (about 1–2 minutes).
Add the ground ogbono to a bowl and mix with 1/2 cup of the warm stock to make a lump-free paste. Stir until smooth.
Pour the remaining 5 1/2 cups stock into the pot and bring to a gentle boil. Reduce heat to medium-low.
Whisk or stir the ogbono paste into the simmering stock. Continue stirring for 3–5 minutes as the ogbono releases mucilage and the soup begins to thicken and become glossy.
Add 2 tablespoons ground crayfish, 1 teaspoon locust beans, 1 teaspoon bouillon, 1 teaspoon salt, and 1 teaspoon ground pepper. Stir to combine and simmer gently 5–7 minutes so flavors meld.

If using raw beef chunks: brown them first in a separate skillet with a little oil until sealed, then simmer in 1 cup of water or stock until tender (30–45 minutes). If using pre-cooked proteins or smoked/stockfish, ensure they are flaked or cut into bite-sized pieces and set aside.
Add the prepared proteins (about 1 cup combined) to the simmering ogbono soup. Stir and simmer together 5–10 minutes so the protein heats through and absorbs flavor.
Taste the soup and adjust seasoning with extra salt or bouillon if needed. If the soup is too thick, add up to 1/2 cup more stock or water and stir until you reach the desired consistency.
Finishing & Serving
If you want extra heat, add sliced habanero (optional) and simmer 1 minute. If you prefer a richer finish, drizzle 1 tablespoon extra palm oil on top and swirl.
Turn off heat and let the soup rest 2 minutes. Serve hot with fufu (pounded yam, garri, semolina) or rice on the side.
