Preparation and Baking
Make the Dough
In a large bowl, combine the flour, yeast, sugar, and salt. In a separate bowl, warm the milk and mix it with the softened butter and eggs. Pour the wet ingredients into the dry mixture and stir until a dough forms.
Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
Prepare the Filling
While the dough is rising, soak the raisins in warm water for about 15 minutes, then drain. Mix the raisins with cinnamon and vanilla extract.
Roll Out Dough
After the dough has risen, punch it down and roll it out into a rectangle about 1/4 inch thick.
Add Filling
Spread the raisin mixture evenly over the dough and roll it tightly into a log.
Cut and Shape
Cut the log into 1-inch thick slices and place them on a baking sheet lined with parchment paper. Cover and let them rise for another 30 minutes.
Preheat Oven
Preheat your oven to 375°F (190°C).
Bake
Bake the Pain Au Raisin for 20-25 minutes until golden brown. Remove from the oven and allow to cool slightly before serving.
