Prepare the Sushi Rice

Rinse sushi rice under cold water until water runs clear. In a pot, combine rice and water, bring to a boil, then cover and reduce heat to low. Cook for 20 minutes, then let sit covered for 10 minutes.

Marinate Shiitake Mushrooms

Slice shiitake mushrooms and combine with soy sauce and rice vinegar. Let marinate for at least 15 minutes.

Pickle the Cucumber

Thinly slice cucumber and sprinkle with salt. Let sit for 10 minutes, then rinse and drain.

Sear the Tuna

Heat a pan over medium-high heat. Coat the tuna steak with furikake seasoning on all sides. Sear for 1-2 minutes on each side until desired doneness is reached. Remove from heat and slice.

Poach the Eggs

In a pot of simmering water, gently add eggs one at a time. Cook for 3-4 minutes for soft poached. Remove with a slotted spoon.

Assemble the Bowl

In a bowl, add a scoop of sushi rice, top with marinated shiitake mushrooms, pickled cucumber, sea lettuce, edamame, and sliced tuna. Place the poached egg on top and drizzle with sesame oil and sprinkle with sesame seeds. Serve immediately.
