Activate Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.

Make Dough

In a large mixing bowl, combine flour and salt. Create a well in the center and add activated yeast, milk, and egg. Mix until a dough forms.

Knead Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.

Prepare Butter Layer

Place the butter between two sheets of parchment paper and roll it out into a rectangle about 1/2 inch thick. Chill in the refrigerator.

Laminate Dough

Roll the risen dough into a large rectangle. Place the chilled butter in the center and fold the dough over to encase the butter. Roll and fold the dough to create layers. Repeat this process 3 times, chilling in between.

Shape Croissants

Roll out the laminated dough one last time and cut it into triangles. Place a piece of chocolate at the wide end of each triangle and roll them up tightly.

Final Rise

Place the rolled croissants on a baking sheet lined with parchment paper, cover, and let them rise for about 30-40 minutes.

Bake

Preheat the oven to 375°F (190°C). Brush the croissants with an egg wash and bake for 15-20 minutes until golden brown.
