Preparation
Brown the Butter
In a medium saucepan, melt the unsalted butter over medium heat. Continue to cook, stirring frequently, until the butter turns golden brown and has a nutty aroma. Remove from heat and let it cool slightly.
Prepare Bananas
In a large mixing bowl, mash the ripe bananas until smooth. You should have about 1 ½ to 2 cups of banana puree.
Batter Mixing
Combine Wet Ingredients
Add the browned butter, bourbon, and vanilla extract to the mashed bananas. Mix well until fully combined.
Mix Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, baking soda, salt, granulated sugar, and brown sugar until well blended.
Combine Wet and Dry
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to over-mix.
Adding Nuts and Bitters
Fold in Add-ins
Gently fold in the chopped walnuts and add the dashes of Aztec chocolate bitters into the batter. Mix until evenly distributed.
Baking
Prepare the Oven and Pan
Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
Bake the Bread
Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve
Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely before slicing.
