Method
Chicken Taco Filling
- 1
Prepare and slice chicken
Pat the chicken breasts dry with paper towels. Slice each breast into thin strips about 1 cm wide so they cook quickly and are easy for kids to eat.
- 2
Season chicken
In a small bowl, mix the mild taco seasoning, ground cumin, garlic powder and salt. Toss the chicken strips with the olive oil and sprinkle the seasoning mixture over them. Stir or toss until pieces are evenly coated.
- 3
Cook chicken
Heat a nonstick skillet over medium heat. Add the seasoned chicken strips in a single layer (cook in two batches if needed). Cook for 3-4 minutes without moving to get a light sear, then stir and continue cooking another 2-3 minutes until pieces are cooked through and no longer pink (internal temp 74°C / 165°F). If pan looks dry, add the 30 ml water and scrape any brown bits to keep chicken moist. Remove from heat.
- 4
Shred or chop for kids
For younger children, use two forks to shred the cooked chicken or chop into small bite-sized pieces about 1 cm so it’s easier to eat in a soft taco.
Taco Assembly & Toppings
- 5
Warm tortillas
Warm the flour tortillas so they are soft and pliable: either wrap the stack in a damp paper towel and microwave 20-30 seconds, or heat each tortilla in a dry skillet 20-30 seconds per side over low-medium heat. Keep wrapped to stay warm.
- 6
Assemble tacos
Place one warmed tortilla on a plate. Spoon about 50 g (roughly 2–3 tablespoons) of the shredded/chopped chicken down the center of the tortilla. Sprinkle about 2 tablespoons of shredded cheddar cheese over the chicken so it melts slightly on the warm meat. Add a small handful (about 2 tablespoons) of finely chopped lettuce and 1-2 tablespoons diced tomato on top.
- 7
Add dairy and optional salsa
Top each taco with about 1 tablespoon of plain Greek yogurt (a mild substitute for sour cream). If the child likes a little flavor, add 1/2 tablespoon mild salsa per taco; serve salsa on the side for picky eaters.
- 8
Serve
Fold the tortilla gently in half and serve immediately while warm. Offer extras (cheese, yogurt, salsa) at the table for kids to customize. Discard lime wedges for small children or use only if adults are serving them.
Optional garnishes
- 9
If using, sprinkle a small pinch of finely chopped cilantro over adult portions only. Serve lime wedges alongside for adults to squeeze — avoid giving lime to very young children.
