Cooking the Beef Hip

Rub the whole beef hip with olive oil, then season generously with salt, black pepper, garlic powder, onion powder, and smoked paprika.

Marinate

Let the beef hip marinate for at least 2 hours at room temperature or overnight in the refrigerator for best results.

Preheat your grill or smoker to medium-high heat (about 350°F or 175°C).

Place the beef hip on the grill and cook for about 30-40 minutes per side, or until the internal temperature reaches 135°F (57°C) for medium-rare.

Remove the beef from the grill and let it rest for 15-20 minutes before slicing thinly against the grain.
