Prep

    Slice and season

    Thinly slice the onion, bell pepper, and mushrooms. If your steak is not already thinly sliced, freeze it for 20–30 minutes until slightly firm and slice across the grain as thinly as possible (about 1/8" thick). In a bowl, toss the sliced steak with salt, black pepper, dried oregano, and Worcestershire sauce. Set aside.

    Preheat a large skillet or cast-iron pan over medium-high heat. Split the hoagie rolls lengthwise, leaving a hinge if you prefer, and lightly brush the cut sides with olive oil.

Cook vegetables

    Add 1 tablespoon vegetable oil and the butter to the hot skillet. When butter foams, add the sliced onion and bell pepper. Sauté, stirring occasionally, until softened and starting to caramelize, about 6–8 minutes.

    Add the mushrooms (if using) and minced garlic. Continue to cook until mushrooms release their liquid and it evaporates, about 3–4 minutes. Transfer the cooked vegetables to a bowl and keep warm.

Cook steak

    Add the remaining 1 tablespoon oil to the skillet and increase heat to high. Spread the seasoned thin steak slices in an even layer. Let them sear without stirring for 30–45 seconds to develop color, then stir and cook for another 30–60 seconds until just cooked through (thin slices cook very quickly).

    Return the cooked vegetables to the pan and toss with the steak. Taste and adjust seasoning with additional salt, pepper, or a pinch of red pepper flakes for heat.

    Reduce heat to low. Lay provolone slices over the steak and vegetable mixture, cover the pan with a lid for 1–2 minutes until the cheese melts.

Assemble & finish

    While the cheese is melting, place the hoagie rolls cut-side down on another dry skillet or under a broiler for 1–2 minutes to lightly toast the interior. Watch carefully to avoid burning.

    Spread mayonnaise on the bottom halves of the toasted rolls, if using. Use a spatula to transfer the cheesy steak and vegetable mixture into the rolls, dividing evenly between the two.

    Top with pickled banana peppers or pepperoncini, if desired. Close sandwiches and press lightly. Serve immediately.
