    Finely chop 1/2 cup yellow onion, mince 2 cloves garlic, and finely chop 2 tablespoons fresh parsley. Set aside.

    Bloom breadcrumbs

    Place 1 cup fresh breadcrumbs in a small bowl and stir in 1 tablespoon whole milk. Let sit 5 minutes until breadcrumbs absorb the milk.

    Combine mixture

    In a large bowl add 1 lb ground meat, the bloomed breadcrumbs, 1 egg, 1 tablespoon grated Parmesan, the chopped onion, minced garlic, chopped parsley, 1 teaspoon kosher salt, 1/2 teaspoon freshly ground black pepper, and 1 teaspoon dried oregano. Using clean hands or a fork, gently combine until just evenly mixed — avoid overworking to keep meatballs tender.

    Portion

    Use a small ice cream scoop or spoon to portion mixture into 1 to 1 1/4-inch meatballs (about 1 tablespoon each) for roughly 24 meatballs, or larger if you prefer about 12–16. Roll gently between your palms to form smooth balls; don't compress them too tightly.

    Place shaped meatballs on a rimmed tray and chill 20–30 minutes. Chilling helps them hold shape during cooking.

Sear and finish

    Heat a large skillet over medium-high heat and add 2 tablespoons olive oil. When shimmering, add meatballs in a single layer without crowding (work in batches). Sear, turning occasionally, until browned on most sides, about 6–8 minutes. They do not need to be cooked through at this stage.

    If you prefer to finish in the oven: preheat oven to 375°F (190°C). After searing, transfer meatballs to a baking sheet and roast 10–12 minutes until internal temperature reaches 160°F (71°C). If finishing on the stove: reduce heat to medium-low, cover skillet, and simmer meatballs in their own juices for 8–10 minutes until cooked through.

Magic glaze (versatile finishing sauce)

    While meatballs are resting or roasting, make the glaze. In a small saucepan over medium heat combine 1/2 cup ketchup, 2 tablespoons brown sugar, 1 tablespoon soy sauce, 1 teaspoon red wine vinegar, 1 teaspoon Worcestershire sauce, 1 minced garlic clove, and 1/4 teaspoon hot sauce (if using). Stir to combine.

    Bring glaze to a gentle simmer and cook 3–5 minutes, stirring, until sugar dissolves and sauce thickens slightly. If too thick, whisk in up to 2 tablespoons water to reach a glossy but pourable consistency. Taste and adjust salt, sweet, or acidity as desired.

    Add the cooked meatballs to the saucepan and gently toss to coat, or spoon glaze over meatballs in the skillet/baking sheet. Simmer together 1–2 minutes so the glaze adheres and meatballs heat through.

To finish & serve
