Combine meat mixture
In a large bowl combine 1.25 lb ground beef, 1/2 cup gluten-free breadcrumbs, 1 beaten egg, grated onion, minced garlic, 1 tbsp gluten-free Worcestershire sauce, 1 tsp Dijon mustard, 1.25 tsp kosher salt, 3/4 tsp black pepper, and 2 tbsp chopped parsley. Mix gently with your hands or a fork until just combined—avoid overworking the meat.

Form and brown
Divide the mixture into 6 equal portions (for sandwiches) or press into an 8x8-inch baking dish for a loaf. Heat 1 tbsp olive oil in a large skillet over medium-high. For patties: shape into patties about 3/4-inch thick and brown 3–4 minutes per side until a crust forms (they will finish in the oven). For a meatloaf: brown the bottom and sides in the skillet for 2–3 minutes then transfer to the baking dish.

Make the sauce
While the meat browns, whisk together 1 cup tomato sauce, 2 tbsp tomato paste, 1 tsp apple cider vinegar, 1 tbsp brown sugar, 1/2 tsp smoked paprika, 1/4 tsp red pepper flakes and 1/4 tsp salt in a small bowl until smooth. Taste and adjust sweetness or acidity as desired.

Assemble with meat
If making patties: spoon 1–2 tbsp sauce onto each browned patty, reserving some for topping. If making meatloaf: spread half the sauce over the bottom of the baking dish, press the meatloaf in, then brush remaining sauce over the top.

Sauté vegetables
In the same skillet, reduce heat to medium and add 1 tbsp butter. Add 1 cup sliced mushrooms and 1/2 cup diced bell pepper and sauté 4–5 minutes until softened and lightly browned. Add 1/2 cup grated zucchini (squeezed dry) and cook 1–2 minutes more. Stir in 1 cup chopped spinach and cook until wilted, about 1 minute. Season with a pinch of salt and pepper.

Layer vegetables
For patties: top each sauced patty with a spoonful of the sautéed vegetables before adding cheese. For meatloaf: spread the sautéed vegetables evenly over the sauced meat before the final sauce/cheese layer.

Top and bake
Sprinkle 1 cup shredded cheddar and 1/4 cup grated parmesan evenly over the assembled patties or meatloaf. Transfer patties (to an ovenproof sheet) or the baking dish to the preheated 375°F oven. Bake patties 8–10 minutes (until internal temp reaches 160°F/71°C) or bake a meatloaf 25–35 minutes (until internal temp reaches 160°F/71°C). If you prefer a browned cheese top, broil 1–2 minutes, watching carefully.

Finish and garnish
Remove from oven and let rest 5 minutes. Sprinkle 2 tbsp chopped green onions or chives over the top before serving.
