Cake Batter

Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment; lightly dust with gluten-free flour or cocoa powder.

Whisk dry ingredients: in a large bowl combine gluten-free flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk to evenly distribute and aerate.

Mix wet ingredients: in a separate bowl whisk eggs until blended. Add milk, oil, vanilla extract, and apple cider vinegar; whisk until homogenous.

Combine: pour wet mixture into dry ingredients and stir with a spatula until just combined. Do not overmix; the batter should be smooth and slightly thick. If batter seems too stiff, add up to 2 tbsp additional milk.

Divide batter: transfer batter to a medium bowl. Reserve about 3/4 cup batter for color swirls (see next section).

Bake: evenly distribute remaining batter between the two prepared pans and smooth the tops. Bake 20–25 minutes or until a toothpick inserted into center comes out with a few moist crumbs. Rotate pans halfway through for even baking.

Cool: remove pans to a wire rack. Let cakes cool in pans 10 minutes, then invert onto rack to cool completely before filling or frosting (about 1 hour).
Kosmic Swirl (Color & Flavor Accents)

Make color pastes: in three small bowls combine powders with a little of the reserved batter (about 3 tbsp batter per color) and 1/2 tbsp water each, stirring until smooth and evenly colored. Adjust amount of powder to reach desired tint; spirulina is strong—use sparingly.

Create swirl layers: once cakes are cooled, split each cake layer horizontally if you want four thin layers (optional). Place one cake layer on serving plate. Dollop small spoonfuls of different colored batters across the layer: green, pink, purple. Using a skewer or offset spatula, gently swirl colors into the cake layer—do not overmix; you want subtle marbling.

Repeat: add the next cake layer and repeat dolloping and light swirling. Reserve the top layer plain for a cleaner finish if desired.
Ganache Frosting

Warm the cream: in a small saucepan or microwave heat the cream until it just begins to simmer (do not boil). Remove from heat.

Pour over chocolate: place chopped chocolate in a heatproof bowl. Pour the hot cream over chocolate and let sit 2–3 minutes to soften.

Chill to spreading consistency: let ganache cool at room temperature about 15–20 minutes, stirring occasionally, until it reaches a spreadable consistency.

Assemble and frost: place the bottom layer on plate (with swirls), spread a thin layer of ganache as crumb coat, chill 10 minutes. Continue stacking remaining layers, applying ganache between each. Finish by coating top and sides with remaining ganache using an offset spatula for a smooth finish.

Decorate: press crushed toasted almonds or cookie crumbs around base or onto sides for texture. Arrange fresh berries on top.

Apply shimmer: using a dry brush, lightly dust edible gold luster over the top for a kosmic sheen (optional).
