Chill and arrange
Place crushed ice or a bed of rock salt onto a large serving platter or shallow bowl to create a stable chilled surface for the oysters.
Keep shucked oysters cold on ice until ready to serve. Ideally shuck right before plating; if already shucked, cover and refrigerate no longer than 1–2 hours.
When ready to serve, nestle each oyster half-shell into the ice bed so they sit level and the liquor remains in the shell.
Passion fruit & dragon fruit mignonette
Prepare fruit pulp: If using whole passion fruits, cut them in half and scoop the pulp and seeds into a small bowl. Measure out 4 tablespoons. Finely dice the dragon fruit and drain briefly on paper towel if very juicy; you want the diced pieces to be moist but not watery.
Combine aromatics: In a medium bowl, add the finely minced shallot, champagne vinegar, and fresh lime juice. Stir and let sit 2–3 minutes to mellow the raw shallot bite.
Build the mignonette: Add the passion fruit pulp and diced dragon fruit to the shallot-vinegar mixture. Stir gently to combine so the dragon fruit pieces remain intact.
Emulsify and season: Whisk in the extra-virgin olive oil to slightly round the acidity. Season with fine sea salt, freshly ground black pepper, and the optional granulated sugar if the mixture tastes too tart. Taste and adjust—mignonette should be bright and tangy but balanced.
Rest: Let the mignonette rest at refrigerator temperature for 10–15 minutes to allow flavors to meld. Stir again just before service and transfer a portion to a small serving bowl or spoon for plating.
Assembly & garnish
Portion the mignonette: Using a small spoon, place about 1/2 teaspoon to 1 teaspoon of the passion fruit & dragon fruit mignonette onto each oyster, spooning it carefully so you don’t overwhelm the oyster liquor. Adjust amount to taste — some guests prefer the mignonette on the side.
Garnish: Top each sauced oyster with a small cilantro leaf or micro cilantro. Place lime wedges on the serving platter for guests to squeeze as desired. Offer hot sauce at the table if desired.
Serve immediately: Oysters should be eaten cold and fresh. Serve the platter right away so the oysters remain chilled and the mignonette stays crisp.
