Preparing Sushi Rice

Rinse and Cook Rice

Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender. Remove from heat and let it steam for an additional 10 minutes.

Season the Rice

In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until the sugar and salt dissolve. Once the rice has steamed, transfer it to a large bowl. Pour the vinegar mixture over the rice and gently fold it in with a spatula. Allow the rice to cool to room temperature.

Thinly slice the sashimi-grade tuna, salmon, and yellowtail into bite-sized pieces. Set aside on a plate.

In a large serving platter, spread the prepared sushi rice evenly across the bottom. Arrange the sliced fish, shrimp, nori strips, and pickled ginger artistically on top of the rice.
