Preheat and prepare

Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper or lightly grease them. Position one oven rack in the middle and one slightly below to allow space if using both sheets.

Wash and cut sweet potatoes

Wash and scrub 2 medium whole sweet potatoes. Peel if desired. Cut each potato into 1/4- to 1/3-inch thick sticks: cut the potato into 3/4-inch slabs lengthwise, then cut each slab into sticks. Aim for uniform size so fries cook evenly. Measure out about 2 cups cut fries (the two whole potatoes should produce roughly this amount).

Dry and toss with cornstarch

Pat the cut fries very dry with paper towels or a clean kitchen towel. Place the dried sticks in a large bowl. Sprinkle 1 teaspoon cornstarch evenly over the fries and toss gently until lightly coated — this helps create a crisper exterior.

Season and oil

Add 2 tablespoons olive oil to the bowl with the fries. Sprinkle 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1/2 teaspoon ground black pepper, and 1 teaspoon kosher salt over the fries. Toss thoroughly so every fry is evenly coated with oil and seasonings.

Arrange on baking sheet

Spread the seasoned fries in a single layer on the prepared baking sheets, making sure they do not overlap or crowd. If necessary, use both sheets and rotate them halfway through baking for even browning.

Bake

Bake at 425°F (220°C) for 10 minutes, then remove the sheets and flip each fry with a spatula to promote even browning. Return to the oven and bake an additional 8–12 minutes, watching closely the last 5 minutes. Total bake time should be about 18–22 minutes depending on thickness. Fries should be golden at the edges and tender inside.

Broil for extra crisp (optional)

If you want extra crispness, switch the oven to broil for 1–2 minutes at the end — watch closely to avoid burning. Remove when edges are nicely browned.

Finish and serve

Immediately transfer the fries to a serving bowl or platter. While hot, toss with 2 tablespoons chopped fresh parsley and/or 2 tablespoons grated Parmesan if using. Taste and adjust salt if needed. Serve hot with your preferred dipping sauce.
