Prep and split crab legs

Thawing (if frozen)

If using frozen king crab legs, place them in the refrigerator 12–24 hours ahead to thaw. For a quicker method, run the sealed legs under cold water for 10–15 minutes until pliable.

Rinse the crab legs under cold water to remove any ice glaze or debris. Pat dry with paper towels.

Using kitchen shears or heavy kitchen scissors, cut along the length of each leg shell on the convex (top) side to expose the meat. For thicker sections, also cut the underside as needed. Be careful — shells can be sharp.

If serving whole legs for presentation, you can instead crack the shell at the joints with the back of a chef's knife and leave them intact; the following steps assume the meat will be exposed before finishing.

Steaming (to reheat and gently cook)

Fill a large pot with 1–2 inches (about 250–500 ml) of water and place a steamer basket inside. Bring water to a simmer over medium-high heat.

Add crab legs to the steamer basket, cover, and steam for 5–7 minutes for thawed pre-cooked legs. If legs are very large or partially frozen, steam 8–10 minutes. The goal is to heat through without overcooking the delicate meat.

Carefully transfer the hot legs to a tray or platter using tongs.

Compound butter and finishing

In a small saucepan or skillet over low heat, combine the unsalted butter, minced garlic, and lemon juice. Stir gently until the butter is melted and the garlic is fragrant, about 1–2 minutes. Do not allow the garlic to brown.

Remove the pan from heat and stir in the chopped parsley, sea salt, and freshly ground black pepper. Taste and adjust seasoning or lemon to preference.

Brush or spoon the warm compound butter over the exposed crab meat, making sure to coat all exposed surfaces. If you prefer a lightly charred finish, place the buttered legs under a hot broiler for 1–2 minutes (watch closely) until the butter bubbles and edges begin to brown slightly.

Transfer the crab legs to a serving platter. Garnish with lemon wedges and an extra sprinkle of chopped parsley.

Optional dipping sauce (quick mustard aioli)

In a small bowl, combine mayonnaise, Dijon mustard, hot sauce, and chopped capers. Stir until smooth and refrigerate until ready to serve. Serve alongside crab legs as an alternative to melted butter.

Serving

Provide crab crackers or kitchen shears and small forks for guests. Squeeze lemon wedges over the crab meat and dip in melted butter or the optional sauce. Discard shells and enjoy.
