Inspect and Drain

Place shucked oysters in a colander set over a bowl. Gently rinse with cold water to remove shell fragments. Let drain for 10 minutes and pat dry lightly with paper towels. Excess liquid will prevent breading from adhering.

Make marinade: whisk buttermilk with hot sauce, 1 tsp kosher salt, and 1 tsp black pepper in a shallow bowl. Add oysters and gently stir to coat. Cover and refrigerate for 20–30 minutes (or up to 2 hours) to flavor and tenderize.

Breading Station

Set up three shallow dishes: 1) flour/cornmeal mix, 2) buttermilk-marinated oysters (or egg wash), 3) panko (if using). In the first shallow dish combine 1.5 cups flour, 1/2 cup cornmeal, 1/2 cup panko (optional), paprika, garlic powder, onion powder, cayenne, 1/2 tsp black pepper and 1 tsp kosher salt. Whisk thoroughly so spices are evenly distributed.

If using egg wash instead of buttermilk: whisk 2 eggs with 2 tbs milk or water until combined in the middle dish.

Working in small batches (to avoid crowding), remove oysters from the buttermilk one at a time, letting excess drip back into the bowl. Dredge each oyster in the seasoned dry mix, pressing gently so mix adheres. For a thicker crust double-dip: after first coat, return to buttermilk/egg, then dredge again in dry mix. Place breaded oysters on a wire rack set over a baking sheet to rest 5–10 minutes so coating sets.

Frying

Heat oil: pour 3–4 cups neutral oil into a deep heavy skillet or Dutch oven to a depth of about 1.5–2 inches. Warm over medium-high heat until oil reaches 350°F (175°C). If you don’t have a thermometer, test with a pinch of the flour mix—if it sizzles and bubbles steadily, oil is ready.

Fry in batches: gently lower 6–8 breaded oysters into the hot oil without overcrowding. Fry 1.5–2.5 minutes, turning once, until golden brown and crisp. Internal temperature of oysters should be hot and opaque; cook time varies with oyster size. Use a slotted spoon or spider to transfer to a paper towel-lined tray to drain. Repeat with remaining oysters, maintaining oil temperature at 325–350°F—adjust heat as needed. Add more oil if necessary to maintain depth.

Optional finish: if desired, add 1 tbsp butter to the last batch of oil for a minute and spoon the foaming butter over the oysters for added richness. Transfer oysters to a warm platter.

To Serve

Sprinkle chopped parsley over the fried oysters. Serve immediately with lemon wedges and tartar sauce or remoulade on the side. Fried oysters are best eaten hot and crisp.

Leftovers: cool completely, then store in an airtight container in the refrigerator up to 1 day. Re-crisp in a 375°F (190°C) oven on a wire rack for 8–10 minutes.
